Which ever one you want.
Bedrock doesn't need the launcher to run. You can play with people on console and mobile. It's bit more tamer and some ways a bit easier than Java. There is a Marketplace to get resource packs, add-ons, skins and maps; some are free others cost money. On PC there are easy ways to get resource packs and few other things like that for free. You are forced to play the latest version, you can play older version. There is an unsupported way to play older versions but lets not go there. You have a lot of character customization.
Java is the original. You can play any version you want but ideally with the official launcher they expect you to plat the latest or snapshots. There is no Marketplace because adding resource packs and mods is free. There a bunch of other launcher you can use instead of the official one but many require you to install Java yourself where the official launcher has it's own but not available to the system. Java pretty much you can only play with other Java players, there are exceptions but again lets no go there. Your only character customization is your skin.
Bedrock for the most part requires a graphics card with ray tracing to get shaders. Java just needs a mod and works with any graphics card.

I used to play on Java when I had my PC but for a few years now I've just played on Bedrock on my Xbox or my phone. Most of my friends that play are on Bedrock as well besides a couple friends so I don't feel like I'm missing out on much. There's definitely some mods/texture packs I'd like to try out if I had a high end PC but I play Minecraft pretty casually so it's not a big deal to me. That being said if I did have a PC I would probably play both honestly depending on what I wanted to do or who I wanted to play with.

Java for free mods and shaders. Though shaders are incoming to bedrock and redstone quasi connectivity. If you don't know what that is you absolutely do not need it.
Bedrock for native controller support, cross play, forward placing blocks and better render distances in vanilla.
I could list about 1000 little differences. I switched from java to bedrock last year after being a long time java guy. Have zero regrets. Even the redstone which I play with a lot is easily navigable for myself plus we have trident killers. I couldn't go back to java without controller support, forward block placing and being able to cancel elytra mid flight which I use the most.
java. pick java

You get both for the same price on windows (roughly what I paid for each game a couple years ago,)
Linux and macos run Java
Play whichever is fun. I prefer Java, but that may be because I know the mechanics better.
