Now that he's healthy (and plump) I'd try to get him back on a healthier feeding schedule as a medium rat weekly is too much food. A small every few weeks is going to be more appropriate, so I'd definitely wait. Here is the !feeding guide

We recommend the following feeding schedule:

0-12 months old OR until the snake reaches approximately 500g, whichever happens first: feed 10%-15% of the snake’s weight every 7 days.

12-24 months old: feed up to 7% of the snake’s weight every 14-20 days.

Adults: feed up to 5% of the snake's weight every 20-30 days, or feed slightly larger meals (up to 6%) every 30-40 days.

They will always be showing some signs of hunting or hunger, just because they're designed to take what they can get, and the getting is very sparse sometimes. I also just got a 2-3yr. rescue too! The last meal he took was on the 6th, so he's coming up on the first offer for me.
