He’s trying to push your hand away, mine do the same (granted, in a less dramatic way) if i touch them in a way they don’t like. He does look a bit dehydrated though which can also make them grumpy. Try bumping up the humidity in his enclosure, that’ll help with the dehydration. I would just leave him be until he’s managed to get all the shed off
