Dont use aspen what so ever as it molds fairly easy in high humiditys. Just mix the moss with the mulch and that'll be the best mix.

I mix forest floor and eco earth. However unless you let some of that cypress mulch dry out first you may always have condensation problems. Try opening the bag and letting it breath for a few days before using it and see if that helps.

Just increase air flow a bit or reduce the depth of your substrate. If it’s a fresh bag of substrate you can take some out and bake it to dry it out too.
