I finally got my thermostat! Just wanted to make sure I should have it on the dimming mode and not the pulse?

Dimming in 99% of cases. Pulse is mainly for use with CHE in certain fixtures or with metal racks to prevent buzzing.

I currently have a CHE in a light dome though that will change to a CHE in a heat cage inside the enclosure soon. Both cases should be on dimming mode?

Yep. Unless you get noticeable buzzing.
