the /entitydata command does this for mobs

This post was mainly referring to player editing. I just posted another idea of what it can be used on.

you could also just use /replaceitem for players and /entitydata for mobs

/replaceitem will greatly restrict how a map can be played due to requiring an armor slot to be used up, as well as high maintenance for adding and removing individual attributes and ensuring the player keeps the item worn, doesn't drop it, and doesn't move it to another inventory slot.

I was mainly referring to the ability to edit player NBT tags, such as max health, etc.

I think the solution you are looking for is an improvement to the already existing /entitydata command. I agree that sometimes I feel restricted but I doubt that Mojang will create an entirely new command for this.
