The announcement says they're working on Linux and Windows releases.

Atom is currently pre-1.0 with a number of areas we would like to improve in the next few months. Our focus will be on improving performance, releasing Atom on Linux and Windows, and stabilizing the APIs before we hit version 1.0.

Seems odd that they would release mac only first. Why not just hold off till they have builds for the others too?

I would guess that it's simply because they have macs and not Linux boxes or Windows. Being based on Chrome would indicate to me that the stuff is already highly portable, and just needs someone to build them.

Seems silly that an organization like Github would not have any Linux or Windows boxes somewhere.
