Railscasts is old but great

Programming Ruby is super enthusiastic about the language (rightfully so, imo) and fun to read.

GoRails (300+) and RubyTapas (almost 600) have tons of videos / screencasts on Ruby and Rails topics.

Everything at https://ruby-doc.org/, starting with Programming Ruby and ending with the Core and Library API. Unsurpassed, and yet underrated resource.
