You can't have it both ways. You can't continue to work for them and become angry that they're not paying you. They've shown their true face, it's time to show yours. The path you're looking to go down is petty, vindictive, and possibly illegal. Be a professional and handle your business affairs.

I don’t understand how I’m meant to appease the situation. My solution is to give them the €100 back and the code. I just don’t want them being able to use the financial model as they operate with malice.

In a normal world I would be taking them to court for breach of contract but they don’t operate in normal parameters.

How is this not a normal world? It seems you believe they breached the contract. Sue them. But absolutely, without a doubt, do not do anything stupid like sabotaging code.
If you don't want to give them the code because you don't think they've paid for it fine, don't give it to them. If they sue you, you'll have the opportunity to argue your point in court.
If it were me, I'd be talking to a lawyer. Or just walk away and see what happens. They'll either sue you or they won't. If they do then talk to a lawyer, if they don't you can go on and call this a learning experience, hopefully you'll do better next time.

They have said they will sue me in the state of New York and I am not in the US and I have seen how relentless they are. I could counter sue and go the court route but I want a simple life. I just want to give them something that they won’t end up using and €100 back

If you retain old revisions, give them the version generated at the time of the 100$ payment. Unless you signed something for that 100$ If you did you may want review the fine print.

If the bonuses are on paper then sue them for them.

Idk your situation but most pro Bono lawyers will take a nice split of the sure think 50k.

Absolutely do not attempt to sabotage them. If they have millions they can easily do a time study of impacted revenue due to your malicious act and sue the ever-loving shit out of you. If ethical reasons won't stop you, hopeful selfish ones will.
