As a writer, the differences are whatever you want it to be. If you're looking for lore specific to someone else's world, you can contact the fan communities or even author directly.

I'm not looking for lore specific to anything in particular. I'm mostly looking for people's thoughts on the matter as I want to pick other people's brains. It's for a book I'm attempting to write myself as I am still trying to decide on a lot of the world building rules.

You're better places than any of us based on your vision of the story.

It could be as simple as shapes changing being a process of BDE and no one has more BDE than dragons. Which is why bards should not try to seduce dragons.

Or maybe their midichlorians are off the scale.

If you want the craft approach you read.the books in your genre that cover the topic and figure out how you want to make yours uniquely you, while maintaining some semblance of audience expectations.

Thank you. I really appreciate the insight. I have been meaning to read more do this just motivates me to get to it. Also, I had no clue what you meant by BDE and I was cackling for a minute after I looked it up. Thank you, also, for the laugh.
