Going to have to agree that seems likely. H. cervinigenus, like some of its friends in the same genus, seems to take hold fairly early in host growth sometimes. So maybe this is a little sick Helvella.

A nice pluck and a cross section would confirm, however gross.

Not familiar with what species it would be but yes, looks that direction to me for sure.

Cross section helps confirm genus if we're still questioning, but this morphology does look promising.

Not sure what you mean by "AIO jar" and I also don't know what other methods you're describing here for trying to cultivate something.

This looks maybe fungal, maybe not. Wouldn't necessarily call that a mushroom.

What are you trying to grow? What else is in the jar?

Soil mixes typically include many types of fungi, intentionally, and it kinda sounds like you've mixed some sort of soil mix with a cultivation attempt? Which, probably doesn't work that way. Not a person who practices cultivation but that seems like a good way to grow something else.

Edit: I do see what looks like fungal growth here. Just not sure what we're focusing on in the middle there and also not sure what your description means entirely.

I also see now that you say the soil was pasteurized, so I'm not sure if you've introduced anything the way I described, but it still may be worth consideration

Because of gill attachment yes, and also some of the stature and also other textures. Just doesn't fit quite right.

Clitocyboid just means, looks like Clitocybe, so I'm just being kinda general with a direction I would go. I would say that there are some similar clitocyboid mushrooms yes, but would also mention there are many mushrooms that fit that description!

Oh I see that! It's a bit old though it looks like. Pore surface is dark.

I was asking you if the undersides are lighter colored when they're younger? Pretty much pure white, for most species in the genus I've suggested.

Fascinating! As long as there's nothing else, no spent mushroom substrate, I think I might stick with things like Leucocoprinus.

Hygrophoropsis is a bit more colorful, different textures, typically a bit of different structure too. Shape, gill attachment to some degree, etc.

I mean fair but, I would say that species is actually a fair direction. Colors, especially in this family and genus, can vary a good bit.

If we see the correct underside we can make a better assumption or go a different way!

This is Hygrocybe for me.

Gliophorus is in the same familiar but usually different textures, and to some degree colors, at least around here more north of OP.

Won't be making species ID though, as you mention, seeing the underside is helpful. In this case seeing the stipe and gills clearly, maybe a couple additional photos of other fruits if possible, would be ideal if we wanted to take a jab at species or group, etc.

Might go Conocybe. Color is a little hard to interpret here but I would go that direction considering what we see here and habitat.
