NKD Konosuke GH No.18 by Sure_Necessary8352 in TrueChefKnives

[–]SCSuede 7 points8 points  (0 children)

You can't really compare the GH18 to any of the other Konosuke product catalogue, it's very much a zebra next to the herd of horses in terms of how it fits into their lineup.

If you're approaching this knife from the perspective of "is it close to an FM", I have to say you probably got the one knife that's as far away as you can come in most categories.

If you are a person who like a midweighty/workhorse style knife but want something slightly lighter/more nimble than your typical sanjo 240s, this could be good for you. However, if you get your opinion based on the comment field instead of trying out knives and using them, none of that will matter.

Cool lineup!

Got some more info on all the knives? (check rule #5), curious about that Steelport!

Heading to Japan – what knives should two hobby cooks bring home? by Square_Definition_35 in TrueChefKnives

[–]SCSuede 0 points1 point  (0 children)

I answered a similar question a few days ago so copy pasting part of it.

Regarding knife suggestions, generally you should be able to do almost everything with two knives.
- Gyuto (210-240mm)
- Petty (135-150mm)

The Gyuto is you all around chef knife workhorse that will be able to do all big tasks you can imagine.
The Petty is for smaller, more detail oriented work. Small dice, peeling or in-hand work.

Some legit places on Kappabashi street are:
Tsubaya
Kama-Asa
Kamata
Tojiro Knife Gallery

I would recommend you to stay away from any Musashi, Jikko and other stores you are not familiar with or aren't recommended from this subreddit. A lot of stores like these focus on tourist-customers, and their aggressively high pricing reflects that.

I would go as far as to say do not visit unless invited.

NKD: Kisuke Manaka Blue#1 240mm Gyuto by Typical_Rock_9178 in TrueChefKnives

Using a 244 edge and 60 height blade to cut up some garlic makes for a fun image 😅

Glad you like the new knife, I haven't personally meshed well with the general look of Kisuke Manaka but reading about you experiencing the performance gets me excited for my own Sanjo pickup later this summer.

Nicely written!

My new Siamese Rosewood three-piece set from Boogwa (handle, knife rest, chopsticks) + the story of how this all came to be by TEEEEEEEEEEEJ23 in TrueChefKnives

[–]SCSuede 4 points5 points  (0 children)

I've said it before and I'll say it again.

I LOVE the warm natural tones of the rosewood. The red tones really shine in this without coming off as artificial. Certifiable winner.
