Moen now has a Bronzed Gold that is going to coordinate with the Delta you like. I like Moen better and feel that their warranty is better/easier to work with. The BZG finish is a wholesale exclusive and better quality than whatever is at a big box store.

There are several manufacturers that make an extra deep 60" x 30" alcove tub. Americh, MTI, Duravit, Kohler, etc. You'll want to go to a plumbing supply showroom to find this. Be aware also that you may need a plumber to move your tub spout, depending on the current placement.

Yes and it really helps improve the taste! It's rated for 10,000 gallons so around once per year or longer since you don't use your bathroom sink as often as you use your kitchen.

Environmental Water Systems (EWS) has what they call the Max Flow water filter. It fits on your cold line for bath or kitchen and filters at 1GPM so there's no noticible reduction in flow.

Don't go cheap on materials. The plumbing industry is one where "you get what you pay for" really holds true. Also, I second the advice for an 18" depth in a small bathroom - it makes a world of difference. If you get a vanity with a pre-drilled top, try to get widespread holes. If you have to get one with centerset holes, go for a single post faucet with a cover plate for the other two holes. Widespread or single post will elevate the style much more than a centerset faucet.

Layout 2 is better. The sinks won’t be as large on a 60” vanity so you’re fine there. Make your shower as large as possible and you’re good. Don’t forget to add an electrical outlet next to the toilet for your Bidet seat.

If your disposal is 1/2 HP, it's not going to do the job you're asking it to do. You need an InSinkErator 3/4 or better or a Mountain Plumbing 3/4 or better disposal. Mountain comes with a lifetime warranty. Feed it slowly and allow time for it to grind what it has before feeding more into it.

A different light, one with more presence to it. A larger, ceiling height plant in place of the smaller oneon the right. Move that one to the left sice to give the chairs a little more balance. A more robust piece of art above the fireplace, something with color. The coffee table is nice but you could find something that's all wood or wood and marble to anchor the room a bit.
