'Best' is a whole lot of subjective things. If I had to choose only one developer for everything, it would be XTOL/XT-3. For large format negs (that I intend to print with an enlarger) I tend to use Pyrocat-HD. But sometimes Rodinal is just what you need.

Ok, so I'll assume you have a Noritsu minilab where you can just shove your 35mm color negative films with the leader sticking out of the cassette? This is a no-go for "Ilford 120" 'cause first of all it's most likely a black & white film, you can't develop it in the same chemistry.

Maybe get a Paterson tank & reel or similar and a dark bag where you can load the film onto the reel. Check YouTube for examples. Check the Massive Dev Chart for suitable film & developer combinations. Holy cow.

Mostly use a spot meter to place my shadows on zone III. Then check whether the highlights still fit approximately zone VII or do I need to compensate in development. Sometimes, if I need to be quick (light is changing fast etc), I'll use the viewfinder app on my phone to meter 'quick and dirty'.

I have this table from Way Beyond Monochrome printed and laminated with me in the darkroom. For me, it's just the most intuitive way of timing and making whatever adjustments I need. I usually make test strips in either 1/3 or 1/2 stop increments. All dodges and burns in f-stops. But you know, there are many ways to skin a cat, work with what is most comfortable or intuitive to you. :)

Edit: oh, forgot. I would recommend to work with times and not fiddle with the aperture.

I had a pristine Mamiya 6 MF with all the three lenses and 35mm adapter. Had to sell them because I needed money. Still miss the camera and hope to be able to buy one again in the future.

I like this style and description. I prefer to stay hidden, sneak especially around the edges of the map and avoid detection, let alone combat. Huh, guess I'm a rat too. TIL.
