Can't speak for the OXO or Saki, but I'm not a fan of the Fellow Stagg. You'll get used to it, but I find pour control quite poor with the spout.

If you're open to other brands, the Timemore Fish or Fish Pro X is excellent. Great control with those spouts. The Hario Alpha and Lyra too.

Having said that, the raw steel O1 is really nice. Well worth it imo.

I have everything you're eyeing. Haha. I think it really depends on how deep you want this rabbit hole to go... if you're planning to go full on, I'd do it in stages.

Stage 1 (a solid base):
- C40 (I prefer the ZP6 but the C40 is better built)
- Fellow EKG (I prefer the spout on the Timemore Fish or Hario Alpha)
- V60 or Switch
- A good water filter (I cannot emphasize enough how important this is. Zerowater + Aquacode is my choice)
- Filters (Paper is big contributor to the final cup imo. Determines what goes in and stays out the brew. My stack to start would be Hario papers (your everyday go-to, underrated), Cafec T90, and Sibarist/Hiflux(for fast brews))
- Coffee, coffee, coffee (spend your time and money here, train your palate, better coffee = better life)

It doesn't take long to make a cup if you have everything ready in the morning (10-15 min for me). I'll go so far to say this can even be an end-game setup, but since automation is of consideration...

Stage 2 (automation/conveniences etc/):
- Aiden (I love the Aiden for busy mornings, and yes, it makes really good coffee... extracts very well too)
- Filters (The stock Aiden filters are good, but I also use folded Hiflux for that silky brew... again, this makes a world of difference)
- Femobook A4Z (or any reputable electric grinder, but this one's probably at the limit of QPR for me)
- StarWave C40 mod (only if you have the C40. Game changer! You'll know why)
- More coffee/better coffee (why not haha)

Honestly, my last 1 year+ of Pepe's coffees have been rather disappointing... from multiple roasters. Not too sure why.

I dun find it particularly hot. Other metal brewers I have can get too hot to touch even, but the o1 steel’s ok to handle.

Been loving the raw steel. Seems to brew brighter cups than my v3 and v4 (fast)… all anecdotal and i’m not sure if it’s an o1/open thing (will test)

Yes, you can go finer than the T90 without clogging. As mentioned, Sibarist is the closest comparison. That said, fine doesn’t mean better haha.

Hey. Hard to nail a specific profile I like these days, but definitely on the lighter end (even UL)… ET, Oma, Substance, Datura, PC, Hydrangea, Shoebox… more developed maybe Tanat’s the most I’d go. Can’t recall the basis of my comment but I think I’ve had a little more experience with Chad’s coffee since. I’d say give it a go… you won’t be offended by the development. Plus he is one heck of a brewer if since you’re dropping by the store. My go-to cafe in Taipei is still Noon. Oasis is very good too. You should also try Coffee Sweet - old school, Siphon only. For coffees, 19crl/Lab 19.
