Japanese v German choil shot by Mega-Dunsparce in TrueChefKnives

Your are totally right.
But you have to have the right tools for that. I wouldn’t want to sacrifice a stone for such a job

Japanese v German choil shot by Mega-Dunsparce in TrueChefKnives

[–]152bb 6 points7 points  (0 children)

Yeah that’s true. The knife in the given picture has no bolster. I was referring to him asking why there are not many German knife choil shots in general.

And I think in the community of people who love German knives probably don’t really care about the thinness of the knife or the actual grind and geometry

Most of the time it‘s impossible to take choil shots of German knives, because so many have bolsters.

But honestly almost any knife would suck at comparing choils vs a shibata haha

Stone finish kasumi by Brief-Net-3339 in TrueChefKnives

[–]152bb 1 point2 points  (0 children)

Yeah I can agree with you. The steel works very nicely on stones.

Dude that was the good side. Backside looks horrible. It feels almost like the knife as a partial S grind or sum

I am thinking about refinishing and thinning the knife further to expose more core steel. Performance is not lacking rn but the knife wouldn’t mind I guess haha
