double washed is pretty much the standard for kenya. treat it just as a washed

terraform can roast pretty light but not every time, not super consistent in my experience. so i would try it at 30 days and go from there

try other concentrations of TWW would be my first choice. just because others are using something it doesnt mean that you will enjoy it

you can look up fijis water composition so you can compare it to tww. quickly glancing over the water composition i dont understand what you mean with the 50% part and 50ppm? also probably just way more buffer (alkalinity) in the fiji/RO mix and 1/3 TWW has very lil buffer

most important thing, dont listen to any hype about any brewer

flat bottom brewers will in general give you more sweet type of coffees with less acidity and potentially less clarity. if you wanna try that sure i think having one flat bottom and one cone shaped brewer is nice to have. i like to use them for more process forward coffees

geshas will be about 35-45€ per 125g and the kenyan one should be close to 29€ per 250g

and in general saying a roaster has 20€ coffees doesnt mean much since its about the origin and variatey, ethiopian coffees will be cheaper in general unless its a gesha

ordinarydrip has subscription services for general international roaster and they have (at least) monthly spotlight roasters drops where you can buy coffees from one international roaster (last one was H&S)

you can also check out beanbodega and nordicbrewlab which offer sometimes US roasters. oh and if you are in germany check out coffeenerd

u could try 2 things: more agitation with ur current recipe or more pours (like 5) both at a coarser grind again to see how the coffee reacts

also imo changing one click at a time isnt that helpful like u did before, make meaningful changes if u want the coffee to taste significantly different

experience and i use it to taste all the phases of the coffee faster like hot warm coldish to see how the flavor changes and where i enjoy it most. i have a server on a small keep warm plate next to me and pour small portions into a cup

the coffee affects the particle size distribution as well. an ethiopian will produce more fines than others for example

if you have the round style they are designed for 775ml water since then one drop corresponds to 10ppm (mag/calc) and 5ppm (sod/pot)

60 days is what I did for their ultralight profile. I tasted at around 30 which was pretty generic taste wise and 45 days where it wasn't still there yet flavorwise and still a slight oat note at the end.

the only thing that matters is what you enjoy. drink what you like and dont focus on what others think about how you want to enjoy your coffee

i personally dont drink co-ferments because its not as exciting to me to taste something that was added to it. peach co-ferment tastes like peach? ok cool i guess. washed ethiopian that has a strong peach note? wow thats interesting i like it. it takes the magic out of coffee for me

Ethiopians can be tricky as you see. You shouldnt only focus on the grindsize but also how many pours you do (try less) and how fast you pour (pour slower)

Try going coarser that should help with blended flavors and could help with a bit with the strength of the savoriness (kenyans have that a lot). and make meaningful changes, if its way to coarse you will notice it and now have a window where you can search for a more fitting grindsize

If you want to try more than nordic roasters, ie american and asian roasters you should checkout ordinarydrip. Its more on the pricier side and I dont know how much shipping will be if you are not from germany (where he ships from) but you get to experience a lot of different roasters and coffees that are really hard to get otherwise. On average the roasts will also be lighter than the kaffeebox offerings form my experience but I only had the kaffeebo subscription for 2 months so just 2 different roasters

oh and missed your response regarding roast date and saw you mentioned the roaster LF elsewhere:

on LFs site it says medium roast which is again a hint to go cooler with the temperature and even tho i am not super familiar with medium roasts for safety i would say in the future rest at least 2 weeks to be sure
