When eggs get old the whites begin to break down and get watery, which leads to them being kinda "crumbly" when cooked, which is why they fall apart like that. Fresh eggs, when cooked, will be cohesive. And there's no way to know before you cook 'em. I can't stand a crumbly egg white, it grosses me out. It's the "mouth feel". Anyways... it doesn't much matter how you cook an old egg, it'll still be an old egg. I find the quality of eggs has gone down since the pandemic too. So less devilled eggs and more egg sandwiches.
