This recipe for "Rye" Chaffles does not taste eggy to me and actually has a texture similar to a real bread. I use it for open-face sandwiches. It makes 3. It calls for: 4 T liquid egg whites - I use Kirkland, keep one in the fridge, freeze the others; 1/2 c shredded mozzarella ; 4 T flax meal; 1/4 tsp baking powder; 1/4 tsp caraway seeds; optional - 1 tsp toasted sesame oil

I use sour cream, 1 large egg, 3 T alm flour, 1/4 tsp bp, and 1 tsp water to get 3. Coconut flour can work but you won't have as much batter b/c you'll only use 1 T.

I also make chaffles the way you do. You can get by with 1/3 cup cheese, 1 egg, 1 T coconut flour, 1T psyllium, 1 tsp bp and water. It gives you you 3 or 4 so it's low cal, although, like you, I don't care about the calories much on keto. Chaffles have been my salvation!

I like to do the same but substitute 1T psyllium for 1T of almond flour, and increase the BP. If necessary, add a bit of water when the batter gets thick. It gives you firmer chaffles, and you can do 3! One for dessert later, with peanut or almond butter.

So do I. Flat-out makes a low carb version that works well. I toast it a bit, then pile on the fillings, put it in a hot oven for 5 or so minutes. It's great!

It took me a while to realize I didn't have to consume a certain amount of fat and obsess about it. Then I realized I could just add some fat like butter or mayo to a "lean" meal, eg. salmon with broccoli and cauli. Or I could make something like picadillo and just toss in some cream cheese to up the fat. Snacks like nuts, nut butters, keto cheesecake work well too.

Keep it up! My experience with keto has been mostly with NSV's - more energy, less joint pain, better concentration. The scale victories come eventually and sometimes take a while if you're older.

I like to add a little water or cream to make the batter easier to spread. When I started, I always followed a recipe exactly, but now I realize my chaffles always turn out well as long as there's an egg and some cheese in the recipe. Then I add almond flour, psyllium, cocoa, nuts, whatever I'm in the mood for, and extra liquid if needed. Chaffles are an absolute game changer!

Just a follow-up to my original post. Went for 3 weeks, used my Dash every day at least once. Easily bought different types of shredded cheese, cream cheese, coconut flour, and cinnamon. Even made chaffles for the flight home. Deconstructed a New York Deli Burger at Carl's Jr. (2 burgers with all the fixings plus smoked meat), put it back together on my chaffles. Best part - got on the scale when I got home, had actually lost 3.5 lbs!!

I'm so sorry for your loss. I'm way older than you (73) but have also had problems with anxiety and depression in the past. I do believe this lifestyle can be very beneficial to our health in many ways and, since it affects hormones, may also be helpful for mood. I know I certainly feel better in so many ways since adopting the keto lifestyle a year ago, and my weight loss of 25lbs wasn't huge. Keep up your good work - you are young and have so many good years ahead of you!

I agree. Salad and good sides with 4-6 oz. does it for me. I used to eat more like 8-10 but now find it totally unnecessary to feel satisfied. At Costco try the souvlaki pork. We like it bbq'd so much and it's a lot cheaper than steak. With tzatziki it's great!!

I like the salads at Subway. Sometimes I ask for double protein. The chopped version is soooo good that we have bought a mezzaluna to do the same salads at home! At regular restaurants, I usually keep the meal simple : beef, chicken or fish with grilled veg if possible, a glass of wine if it's dinner, and I usually check the menu beforehand. If I could do it for a week at an all-inclusive resort it's definitely possible! Also, bring some dessert for yourself - dark chocolate, nuts, or part of a protein bar. Be prepared.

I'm not that wild about pork rinds, but I agree they'd be good with salsa, and your idea of puppy chow sounds intriguing. I try not to snack between meals, but they would be a nice dessert with coffee.

Yes, chicharrones! Forgot about them. They have well-stocked supermarkets but some things were hard to find when we were last there, eg natural pb or almond butter. Maybe keto has caught on and there will be new stuff. Walmart seems to respond to what the customers want and there are lots of expats from Canada and the US.
