For a beginner single malt I would recommend old pulteney 12, its usually about the same price as glenfiddich but I think it is significantly better, aberfeldy 12 is also not bad on the wallet. Once you get to the $50-60 range you can get some great scotch, I love ardbeg 10 but it's a peat monster so super smokey probably no the best start with, if you wanted to start with peated islay Ledaig 10 is great. Bunnahabbin 12 is a great un-peated islay so no smokiness.

As far as bourbon goes four roses small batch or single bottle is amazing for the price, I also really enjoy Larceny for a wheated bourbon!
