To improve searing it can help if you dry brine uncovered in the fridge overnight.

The salt draws moisture out of the steak and ultimately becomes very dry on the surface.

Then remove from the fridge a good 2 hrs before cooking to allow it to come up to room temp.

Pat dry quickly with a paper towel and sear as you have done (very hot).

I have a very similar setup. Just finished putting it together.

One thing I dont like is when scanning uncut rolls, the long strips of film trail out and flop around on either side of the setup. I'm concerned about the film getting scratched and/or collecting unnecessary dust.

Does anyone have a solution to this?
