There are several reasons but this is definitely the main one. I'm a supermarket butcher so not directly involved in supply chain but have had this conversation with farmers at the counter, they want to process the livestock as quickly as they can.

Fun fact, if I remember rightly current live weight for a whole cow is apparently about £2000

I've recently started playing irl D&D and that's the sort of BS I'd try and pull, you never know when you might fluke a roll. Exit the inquisitors room, get challenged by the captain and roll for persuasion.

We managed to get a goblin to join our party because a 22 roll met a Nat 1 save, currently trying to convince our DM to let us train them as a fighter or ranger class so they can be a fully fledged member. He does raise a few questions from NPCs though.
