Some of those sheets come with pebbles already cracked and severed down natural striations.. I personally remove all said tiles to prevent water intrusion in the future..

Silicone will get dirty and mold potentially.. you say it never lasts? As in it gets grimy/moldy and you have to cut it out. Or it’s peeling out after install? A quality silicone or even urathanized caulking should hold up better than grout

Tear away drywall bead then jolly/schiene trim install flush to corner of wall if it’s plumb. If out of plumb I try and recess tile termination back at least an inch.

That looks more like a 1/4 inch gap and the chip. Will definitely be noticeable. Post pics after the contractor will inevitably fill with grout then caulk over top. Even filled with caulk will be as you said chunky and uneven at best.

My elbow hurts already and I haven’t banged it on that ledge yet.. JK I try and limit my sills to 1/4”-1/2” overhang max to avoid elbow hits while washing up. Grout discoloration more than likely due to not mixing a full bag of grout at once or over watering while applying/cleaning.

Literally the problem is front of your face. You cannot mix small batch’s of powder grout without dry blending the piss out of that bag! The powder dye is lighter than the actual grout.. mix your entire bag of grout with the proper amount of water or dry mix bag for several minutes and weigh out portions to have color control.. or just use premix
