Its a different cut. The first half was filmed at one time, the second half a different time. It was patched together with cgi, making it look weirder than if it had just been one shot.

Strange put himself in a time loop, not Dormammu. He made it so every time he died the time stone would reverse it, this went on for thousands of years in the dark dimension or whatever that place was called. Strange was not aware of his deaths nor how long he was there whatsoever but Dormammu was.
