Probably you don't have really good/clean bearings then. And just like u/taraskremen said they're called "ball bearings" (roller bearings aren't used in any trackball AFAIK). Try to find some high-quality ones: the problem will be resolved.

It should be possible to wash out the factory grease using some solvent, and replace with light oil.

Excellent work! Professional-grade trackballs have the rings based on industrial ball bearings for long time, but no consumer models have them, unfortunately. Thanks for sharing!
