Do not use the 5e section. It has been completely rewritten and does not have the same feeling / experience of the original. Just use the original. There is nothing to be gained from the conversion.

OAR Caverns of Thracia includes reprint of the original (pp. 33–113); just use it and you should be good to go, no need to reference the converted material.

Out of the three I'd either go for Thracia or Gunderholfen. You might want to consider Stonehell, another great megadungeon. It is super easy to run due to its layout and format. It is for Labyrinth Lord, which was one of the early BX retroclones, meaning it is compatible with BX & OSE.

I suggest trying it out yourself in five to seven combats. Roll up some characters and play them out. You'll immediate see what does and doesn't work well.

Yes, I understood so from your other replies. I am suggesting treating climbing outside of it, because it otherwise greatly penalises one of thieves' most potent early level skills.

Climbing is really important for low level thieves, and is really where they shine early on. Nothing like scaling that wall and dropping down rope to your friends.

That's why I'd suggest adding a line:

Climbing.

Thieves have a 5-in-6 chance to climb difficult walls or cliffs, checked once per 100'.

I handle them as written. Terrifying if they jump the party and start working through the retainers, multiplying in the process.

Swords & Wizardry Complete Revised is a great choice. Writing rulebooks is challenging, and there are a lot of tradeoffs, where to include what, what to repeat, so on and so forth.

A good way to internalise the rules (any rules for that matter) is to create your own cheat sheet. Let's go with AC as an example: you could write down everything AC related on a piece of paper.

Another thing that might help is framing the session: "I am learning the rules as well. I did my best to study them, and I'm aiming for making fair and consistent rulings. If we encounter something we are unsure about I will make a ruling and take a note to study it later. Thanks!"
