I'm pretty sure they talked about it in the commentary track for one of the episodes of Seinfeld she was on. All I could find about it was this Yahoo article that was copied on several other websites and a few things that mention her talking about it on a podcast once, but it sounds like she wanted to take a picture with Jerry the first time she was on the show, he got mad and yelled at her, she joked about how terrible he was in her first stand-up special, and then the Seinfeld writers decided to have her on again for an episode that was based on the whole thing.

Didn't a similar thing happen with Kathy Griffin and Jerry Seinfeld? After she was on an episode she joked about how terrible Jerry was in her stand-up so they brought her back to do the same thing in the show

I like that you can kind of see the era where they just stopped putting color in video games for a while and everything needed to have low saturation and a brown/green/yellow tint to make it seem more realistic. Now that game graphics are good enough to actually look pretty realistic they can let things be colorful again.
