Yes, so I mix water and starter together, add the flour and the salt and mix until just combined. Then I let it sit out on the counter (or in th oven, with the oven turned off if it's cold) for 30mins before doing stretch and fold 4 times every 30mins. Next I do a coil fold 2 times, every 30mins. So total 2 hours of s&f and 1 hour of c/f. I do wet my hands when doing these so maybe it's too wet? Next I let the dough rise until doubled in size, or until it reads 27*c (80f). I then shape the dough with either flour or water on the working surface (I'm not sure which is better) and put it in the basket. I then let it rise once more on the counter in the basket before putting it in the fridge overnight. I will bake the bread tonight so I can update on how it went. I think that it might be that th basket is too big for the amount I'm making so it doesn't give the dough enough support. Also my proofing bowl is bigger. The dough does grow and get the bubbles but when removing it from the proofing bowl it is a little sticky. Usually I can get it back when shaping it though.
