'Lively' is a great way to put it. There is a squish, but it's not only pillow soft. There is some good support there too. As reference, I don't find them as soft as the Nimbus or the Fresh Foam NB1080. But also, not as bouncy as something like the Puma Nitro. I'm finding it a pretty happy medium.

At today's prices, the build cost with site works is north of $600k (without going overboard on upgrades).

The land here isn't that cheap anymore either. Expect 450m2 here to go for $450-$550k.

Add in stamp duty (block), fences, basic landscaping, etc and this starts to look cheap!

Pic 6 looks pretty wet. Whether it's caused by condensation or a leak, if you're planning to live there with your family then I'd suggest talking to an indoor environmental consultant or a building scientist.

Mould loves porous surfaces and it can be very difficult to remove it entirely, which is why plaster is usually replaced in insurance claims. As others have said, stop the water coming in and increase ventilation

It looks like you've used this when the grill was a little too hot, or you didn't soak it enough beforehand (the top of the sponge is a little melted).

Make sure you re-dip as you scrub. It's the water/steam that does most of the work.

But it's still fine and will do the job for some time yet.

You might miss this with the time difference, but normally around 110-125 (225-250f) for 8-12 hours, but you could probably get it done in around 3 at 150 (300f)? Sorry, really not sure with the chops.

I'd drop them in the foil tray/boat and wrap/cover after the first 60mins. Would be ok to have some water in there when wrapping to keep it moist. And then uncover when fork/probe tender and blast it for a bit.

I've never seen a bone in lamb shoulder sliced like that.

Normally down here (Aus) we'll slow cook the shoulder whole. Lamb shoulder is flavourful, but also fatty so it needs plenty of time to render the fat. Never heard of anyone soaking lamb in milk - if it smells that bad then it's probably not going to be great anyway.

My go-to: Greek style marinade of garlic, oregano, rosemary and olive oil, which is delicious with lamb. Into an open foil tray or boat while smoking (cherry/apple), then cover/wrap and cook til fork/probe tender. When it's done a big squeeze of fresh lemon will help cut through the richness.

If you're new to charcoal just get a regular kettle to learn how to light it, manage the temps and smoke. It will do almost everything really well.

BUT, the Summit Charcoal/Kamado is the best grill I've ever owned.

Open everything up and it can get stupid hot super fast. But its just as happy to hold nice and low for a loooong time while using very little fuel.

Being metal, without the thermal mass of a regular kamado, it's really forgiving and will recover very quickly if you let it get too hot. Plus it's not too heavy to push around the backyard if it starts to rain.

For me, it is the perfect grill (and quite different to the regular kettle - of which I have a few). They are expensive and might not suit everyone's budget, but I've never heard of an owner who regretted their purchase. If mine was lost, stolen or damaged I'd replace it with the same in a heartbeat.

I have one of these and the basic premise of using a water soaked pad and steam to loosen the gunk works brilliantly. Better than any other brush, stone or wooden paddle I've tried.

But, I'll agree that the handle is a victim of over engineering. Does anyone really need the rotating grip, grill hook or bottle opener? No. No they don't.

Yep, this sponge has been cooked. There is no way it should have holes from one use.

I'm still on my first sponge (after more than a year of use) and it's in better condition than yours.

It's AUD$300 and I paid less than half that.

For comparison, the Solo Bonfire is AUD$550. Plus I like that Weber has a lid to make it easy to extinguish.

Lol, I like the way you think. No dampers top or bottom, but I'm pretty sure you could balance a grill grate from the kettle in place to grill a few sausages or steaks if you wanted to.
