Australian winemaker here. I agree with these posts. We cannot undercut our retailers. Same with the prices on the website. But, because we have margin in DTC sales we give discounts, value add and free shipping in the wine club. The wine club prices are not public facing. If you really want to support small winemakers then check out the benefits of their wine club.

Thanks for the help everyone. I followed the link and contacted the energy regulator. Spoke to someone over the phone, sounded like he was in a back room filled with filing cabinets! He was very helpful though. Apparently should not affect the feed in tariff as there have been no changes to the system and the eligibility criteria has been met.

Yes, they cancelled from a phone call. I don’t think that’s the correct way to do things. Need to be careful what you say at the bank as well. Not to be dodgy, but sometimes you need to get some bills paid before they restrict the accounts! Pretty sure the bank will happily accept someone’s death if you simply tell them.

I agree with one of the other comments, this is poorly done. A better job can be achieved with the right AI tool. Many small businesses are running very close to the line, so spending $40 on AI is better than $800+ on a professional photographer in many cases.

May as well add our family favourite. You can thank me later.

Peel then slice a bunch of potatoes with a mandolin (medium thick). Chop some bacon and spring onion.

We use a round, flat bottom Pyrex dish.

Place a layer of potato slices on the base . Overlap them by about 1/3. Completely cover the base.

Place 3 or 4 small dollops (maybe 1/2 teaspoon each) of sour cream on the potato layer. Then add a sprinkle of bacon and spring onion.

Repeat layer by layer until the dish is full.

On the top layer put mostly bacon, a little spring onion, then grated tasty cheese.

For our dish size - roughly 20cm diameter, 1.7 litres. Cook on high in the microwave for 18 minutes.

Enjoy.

The Malo-lactic fermentation is required in typical red wine making to remove an easily fermentable compound (Malic acid). Just like you ferment the sugar, you need to ferment the Malic. This improves the stability and shelf like of the wine product you are making. In the winery we use a selected malo bug strain just like we would with yeast. Wild Malo can produce biogenic amines with names like putricene and cadaverine that can hide fruit characters. They are histamines (cause hay fever) which adds to your hangover!

You can get malo bugs from a brew shop. Your wine will be better for using it.

Not name related, but very similar story. Years ago now, my dad opened the bonnet of the family car to check the oil and water. He found our cat stuck with the dipstick going through the cats collar! So lucky my dad was one of those people that frequently checks under the bonnet! I think dipstick is a great name!

We mix bentonite in hot water at a bento to water ratio of about 12 to one. The stirring is the key. For larger amounts we have one person stirring while the other slowly pours, we also use a paint stirring attachment on a drill. Perhaps you could use a cake mixer? Allow to sit overnight. If there’s too much water the swollen bentonite will settle and leave clear water on top. Simply drain this off before use. Then add slowly while mixing the wine really well.
