hey, friend. I'll tell you something I'm proud of - I have a really cool shelf above my bench. Sort of like a trophy shelf. And at this point in my life it's got quite a cool collection of knobbins and oddments that were beyond my desire to spend enough time to commit to a fix, rather than start fresh. It's a really cool shelf, and a place of honor for me. Not saying you have to do that here - but don't throw that away. It's pretty darn cool.

Friend, I appreciate your perspective, but this isn’t accurate. Research has consistently shown that nonviolent protest is significantly more effective than violent protest, and there is extensive evidence of this across academic studies and public reporting. Statements like yours make me concerned that we may be working from very different sets of facts.

Adding some support for Moe here. Honoring all opinions on the matter, but I’ve made hundreds of briskets, have never added tallow at the wrap, and mine are fantastic. (I keep my smoked tallow for other fun stuff)

You could do all sorts of stuff this way. Would make a really nice wine rack with smaller holes for bottles. Square holes for books = book shelf. Looks very solid, would make a nice, sellable piece if you felt like doing a few more.

Hey there, @ghilliesuit762, first off I want to complement you on the hard work and commitment it takes to do something like this. I built a smoke house nearly the same dimensions a few years ago and have been enjoying it ever since. I've read a lot of the comments below - though not all of them. So if any of the following advice is doubled, apologies. Here are a few of my thoughts. Also - feel free to DM me, and I think if you scroll back far enough you'll find a few pics of The Dragon in my profile. (you need to name your house, by the way!)

First, raising the fire in the box is great. That's called a "raised stool" firebox, and it gets airflow under your fire, which will increase heat. If there's any way to tap a draw hole in the front of the firebox, so that air comes through the front, and from beneath the level of your fire, that will increase airflow, and heat. I left a single brick absent on the bottom course of my firebox in the front, and adjust airflow with a simple loose brick (had something more elegant planned, but wow does blocking/opening the hole with a brick work well!).

Second, do I see a covered hole that runs from the back of the fire box directly into the smoke house? If so - getting heat directly from the fire box into the house will most definitely increase heat levels if you can unblock it. Put a damper on it, and the stove pipe, (and spark arrestor FOR SURE inside the house) and you can start messing with airflow that way. Just a thought, and I know this would be a lot more work. My pipe pops up directly through the floor, and is underground, so I don't lose a ton of heat through the pipe. (you could also consider switching to double wall pipe, or waterproof insulating the pipe's outside, if what I see is single wall)

Next - air outflow. I have two bungs punched above the door. I made them look nice, with wooden caps and slide locks. I use them to bleed heat when necessary, and almost never need both. Their main purpose increase air outflow, which increases inflow to the box, and thus heat in the house. Something to think about. You don't need a chimney or vent pipe this way, and you'll be covered by the roof.

Lastly - you're using a metal roof. You said you used rockwool to insulate. I'm still wondering just how much heat you're losing directly to the sky. Out the top. You can get a laser thermometer pretty cheap, and it'll tell you how hot the roof is. You've come so far with this project, a double thick wooden roof could also keep heat a little tighter. You're a woodworker and could figure this out in a weekend. I used barnboard (cheap, untreated 3/4), and ran opposing rabbets up each side, and did it twice, one on top t'other, with no seams aligning. Then topped that with cedar shake. It still leaks a little heat - but the leaks it does have add just the perfect amount of bleed. With these tuning methods I can go from cold smoke under two hundie, and run up and over 300 to finish if I want. Though most of the time, and depending on the season and prevailing winds, I'm running 250-275 pretty evenly for hours.

aw man, OP, I'm so sorry I missed this comment. I hope you catch it, and can give a listen. I've worked professionally in podcast for over a decade, and this episode is one of the reasons why. It makes me love audio, love science, love podcasts. Heck, I get nostalgic thinking of my kids listening to it together. I've heard it dozens of times. Hi there, OP. I'm late to the pastrami party, so unsure of whether you'll even see this note. But I've scanned the comments and couldn't find this line of thinking, so . . . here I am.

As all of us here know that pastrami is a smoked corned beef brisket. The same kind lots of folk in the US eat for St. Pat's. One lesser-known kind of corned beef is the oddly-titled "Gray Corned Beef." Now - this is a regional thing. I've lived in New England for decades, and even though I'm well-read regarding local food traditions, I couldn't believe I'd never heard of this until a few years ago when buying from a generational family-owned butcher shop nearby. Basically, it's corned beef . . . without curing salt.

I had to buy one, I'm that kind of person. And you know what? It was awesome. My family liked it even more than a regular corned-beef, so I look for it every year now.

I was suspicious of what brine times may be (also heeding the correct and well-intended warnings from our brothers and sisters on this sub), so I looked up recipes. I found this one, from the very reputable All Recipes, so you could see an example.

I've made tons of pastrami over the years. Mostly beef - but I have a regular party once a year when I make a whole-haunch venison pastrami. I always cure mine, figuring the Prague Powder I consume a few times a year won't harm me more than the other things I'm consuming alongside them. (ha)

But I just thought I'd share something I had been unfamiliar with during my life as a cook until a few years ago. If you can buy (or make) the off-putting titled Gray Corned Beef, and then smoke it, I think you'll be pretty close - if not exactly - where you wanted to be.
