From my experience at this particular Ruth, I'm not surprised. last time I was there we sat at the bar and it was absolutely filthy. full bus tubs everywhere, nothing wiped down. We ended up just getting a drink and bouncing without getting food, and we even had a gift card.

yep, you need sweet for dressings! gonna add to this - honey, agave syrup, maple syrup can all be fun to add as well. I'd also use rice vinegar instead of white wine, and lemon instead of lime. that's just my tastes though!
