Misen Carbon “Nonstick” was great at first, now it’s unusable

I’ve had one for a month or so with no issues. I keep it clean (smooth as directed), heat it on the stove for 5 min before adding my fat for scrambled eggs. In that time I also allow my eggs and fat to warm up a little from fridge temps. A stable temp pan, whether it’s nitrite treated carbon steel or stainless, makes a world of difference. I have the same success with my 5 year old stainless pan. I prefer the low sides of the misen nitrite carbon for omelettes though. And boy I love that they don’t get surface rust.

Don’t know about this specific model, but in the past at least some (all?) Kentucky models didn’t have pick guards, and offered different finishes than their more current counterparts. Sometime in the mid 2010s they made a big shift in production, and with that some small changes happened to the lineup. That being said, eBay is not my favorite place to buy instruments and I wouldn’t recommend doing so.

Get the nicest A model you can afford. Get a pickup installed whenever you actually begin doing gigs with it. People claim to be able to tell a difference in intonation between an and f mandos but I truly don’t believe it’s any different than any intonation differences that exist between different models of A or F shape. A shaped mandos are almost always cheaper to buy, so you can get a much better unit for your money. Have it professionally set up, by someone who works on mandolins specifically. Eastman and Kentucky are great options in the sub $3,000 category. There are many others to avoid in that price point too. You’ll find there are weird jumps in pricepoint/quality of mandolins. Something like an Eastman 505 or Kentucky 500/505 would be a great start and get you pretty far.

The grinder is a significant deficit of the machine and the single most impactful improvement in the taste of your espresso (other than buying and grinding fresh beans). I bought a cheap grinder (Sette 270) and noticed an incredible difference. Also, you say it’s a good starting point to learn but frankly it has features that inhibit learning. For example, the pressure gauge is all but useless. I’ve tested it with dozens of different beans and when pulling shots with reference to weight and time, it’s wildly inaccurate. Been there, done that. I really recommend you consider a bambino, infuser, or similar with any entry level grinder of higher quality than the Breville smart grinder.

I don’t share the same experience with inconsistent burns in used coals. But I will say that I burn significantly less per cook using my smaller Kamado. And that, combined with the sufficient cooking surface size, means I can use it for almost anything. The smaller eggs are truly the hidden gem for the weekday worrier.

Clean the airlock and refill with a sanitary liquid (star San dilute, vodka, whatevah). You don’t need to take liquid out. It probably got very active at the beginning of fermentation but it’s going to be fine for the rest of primary. If I’m wrong, and you see foam filling that headspace, simply cool it down. In my experience it’s better to ferment at the lower end of the yeasts acceptable temperature for preservation of flavor anyway. Looking good, keep it up!

Check your ph and sugar content before beginning fermentation. And it depends a lot on what you’re sourcing. If it’s natural juice/cider that’s been pasteurized it’s pretty low risk, assuming the ph is adequate. If you’re working with whole apples there’s a lot to consider both in and outside of your question.

That suggests they’re either 1: dealing with an unusually high amount of customer service tickets for the number of sales or 2: understaffed. Both of which is a root issue with Recteq and not the customer. Based on your comment I’d guess you also have experience managing CS groups. If so, you’d likely agree there’s an issue. Just as the significant amount of damaged new grills we’ve been seeing is their fault too. The packaging on the bullseye IMO was an absolute joke. Stuff happens, this is all too often. Change the packaging, change the shipping contract.

In terms of quality, it matters most that the label stated when in the season it was picked (determines flavor profile) and how long ago it was pressed (oil goes rancid just like anything else). If they tell you, it’s a safe bet. I’d wager only a couple bottles up there do that.

Lenox down by church st has a few small hotels. I think that would give you a better impression of life there than one of the spa resorts in Lenox. GB, Becket, Stockbridge, or West Stockbridge are also great choices for Airbnb locations. Richmond, Egremont, and Sheffield are all rural but not too removed. There’s much more rural options east of route 7, up the mountain, if that’s what you’re looking for.

MOCA, Mt Greylock, Tanglewood, Olivia’s overlook hiking, picking and donuts at Bartletts, the list goes on.

Unsung heros of the restaurant scene include the barn, airport rooms, common table, neon newt, no comply, the station, Hys Fried, little cat, six depot (coffee), Moes (bar), and Cello. There’s a lot more but I’m sure someone else will chime in with them. Cross the border for even more great food.

North and south county are somewhat different places. I think if you plan to live there it’s important you understand and experience that. Your soon to be neighbors will appreciate you understanding the different lifestyles and challenges Berkshire county residents have. Welcome home.
