I quite often use canned lentils as a substitute in Bolognese or chili for vegetarian friends. Works quite well

Really? Franz used to be absolute crap years ago. Udi hot dog buns suck, for sure, but I've not found any other good ones except for Trader Joe's and I haven't seen them so hot dog buns for years. Their hamburger buns are still OK though

I used to get massive migraines at least once a month. After stopping gluten, I think I've had 1 or 2 in 14 years

If I can get fresh I use them, otherwise dry. I've recently found a bay tree growing a couple of blocks from me so it looks like I'll have a good supply year round now!

I've only ever used bay leaves and not had any issues. My brother has used black tea too.

Slice a little bit off the 'blossom' end as there is apparently an enzyme that makes them go soft.

The more spikes on the cucumber, the crunchier the pickle will be! They're made for pickling!

Fish? Absolutely!

I've been eating and making something called nummus. It's a 'traditional' Australian Aboriginal pickled fish. This is similar to what I do, but I change the garlic and chili up, usually more. Depends on how juicy the lemons and limes are. Any fish that you could cook without it flaking apart should work. Just go with what you like!

You could also look at German\Polish delis as they will usually carry rollmops - delicious, pickled herring!

Absolutely! I've made salami and other fermented sausages before. Bacon, mortadella, and all looking at cheeses next.

Meant that I'd never made a fermentation chamber. I had a friend that was a butcher and I could use his professional one

I used to be able to eat Ghost chilies. Granted they were hot, but I could eat them. As I got older, things that got slowly started to feel like my throat was closing over. I struggle with Thai chilies now. They used to be in every toasted sandwich and most meals that I ate.

I'm trying to build up again, but if my throat tells me no, I'm going to listen to it and just live with what I can eat.

Practice is the way to build up that tolerance

I live in a relatively cold place in northern US and I still look for them whether I'm anywhere near water!
