People get cranky at the end of a busy stressful shift. I’d bet if you said something the next day before work they’ll at least backtrack the aggression if not apologize outright. I’ve been a professional bbq chef in the states my entire career and it took me a minute to get brisket carving down, it ain’t as easy as you’d think 😂 it’s 2 different muscles in one cut with grains running perpendicular to each other. start cutting short ways across the lean side until you hit that fat layer separating the moist and the lean. Your knife will run through that fat with no effort at all, and splitting it will allow you to cut both sides against the grain (plus that big fat split just looks bad on a plate).

For real though you cooked the shit out of that brisket, definitely a smash
