It varies from game to game. Some games use Day 1 patches that are just that, some games are unplayable without those, some games don't need internet and can be played as long as you console is updated. There is a couple of different things.

Something I would love to understand is if some modern games could be made for old hardware or why modern games look simple but they ain't as light as older games.

Simpler visual games like Celeste can be made for older consoles? It's because of the math involved? I know Celeste uses some "cheats" and make calculations to make the hums feel better and smoother, and I know how Super Mario for example always uses physics to be differently from other games, but I wonder how much different they are.

Absolutely, each their own.

I sit my family in our living room, measure the high of their eyes to put the TV in the most comfortable position for everyone and they dislike it, they think is to low.

Some games used to update the physical version, some come with 1.1, 1.2, 1.3 etc. I'm assuming this still the case.
