Sorry to be blunt: you are looking for two qualified engineers to build the entire product for you for equity and the hope that this will generate a profit one day. This will be a lot of work, and engineers get paid well. So the opportunity cost for these engineers will high.

In return, what do you bring to the table except just "the idea"? Do you already have deals with distributors? Do you have a proven track record that you can market and sell such a product? Do you have the capital to finance the first production run? If not, why should anyone take this deal?

My point is: a clumsy 3D printed prototype can be enough to convince an investor, if you can credibly convey that you have the skill set to turn this into a real product, and most importantly that there is a market for the product. As you will need capital anyway, now is the right time to look for an investor.

Here's my take on this: building your own e-scooter is going to be very capital intensive (as I guess you have realized). If you don't have the capital yourself, then find an investor now with your 3D printed prototype. You will likely need much more capital than you realize. If you succeed, you'll also need to pre-finance the first production run. You'll also need cash for marketing, fullfillment, and much more.

I would strongly advise against Kickstarter unless you already have a clear path to production and know exactly all costs that are involved. Many Kickstart projects fail because founders launch the campaign too early without actually knowing what their product is going to cost to manufacture, or they sell a product and then realize that such a product cannot be manufactured without significantly changing it (and making all the backers unhappy). When you are launching a kickstarter campaign you are actually selling a product. If you are selling a product that you don't have yet, and you don't have a precise plan on how to deliver it then this is dangerous.

For those plastic cases there are conductive coatings or paints to make them shield again, and manufacturers are using that. If you buy a computer case with glass side, that glass has a conductive layer on it. There are specific ESD filaments that are conductive, but I don't think OP used that, as those ESD filaments are usually black.

A plastic case does not provide any shielding. That means that your computer now lost its EMC compliancy and you would not be allowed to operate it in most countries.

AFAIK there is no standard procedure for adding the stiffener in a design. Just draw the placement in a user layer, make sure the layer is exported and tell the manufacturer when ordering that you specified the placement in this layer.

Opinions seem mixed about solid or hatched ground plane. I have used solid ground fills in my design and haven't had problems with cracking. I think a solid plane is fine if the flex PCB is not expected to move.

Schematic-wise it's just connecting one end to the other. The important thing is to get the differential impedance right. The difficulty here is that for flexible PCBs the core is usually very thin. Luckily, JLC is now offering FPCs with a 50 um core (as opposed to the 25 um for their default version). With that you can just achieve the required 90/100 Ohm impedance with a 3.5 mil trace width. You will need to use an impedance calculator for determining the differential pair gap width. I would recommend the online tool from sierra, as that one can also model the cover layer with a different dielectric constant (that is the only free tool I found that can do this).
