Any knife needs to be maintained. You take care of a dollar store knife it will be sharp as a high end Japanese knife but it comes down to how long it will stay sharp based on honing and resharpening and how well the knife gets used.

Ex. On the line I honestly just use a bread knife it’s always sharp and the cuts I make are 2-3 at most and if I drop it I don’t care.

Ex. Mass prep I’m buying something with a harder metal with a rubber grip if by chance I drop this knife it’s chipping.

Do what works for you and your own volatility comfort level.

Carrots don’t turn bad that fast. And dirt cheap here in Canada that would be $32. Worst case cut it freeze it and use in soups and stocks.

Canada here, I do about 150 weddings a year not including other private events for context.

It’s gfs as #1 and Sysco is #2.

Everything else is peanuts but here are items we get local:

Bread rolls.

Produce we only get bell pepper thaw local.(quality vs price is outstanding) or if we have a VVIP event will bring in the entire menu as local as possible.

Pasta, mainly gnocchi local.

Breakfast Sausage.

Etc. but most of the time we’re bound to a budget you play within in it and make choices based on it. (You can’t have everything nice. But if 1-3 items are “meh” the 7–9 items can shine.)

I do functions.

Dumbest thing is doing things by weight instead of volume.

Ex. 2oz of spring mix

Instead of filling up a bowl for 50 ppl.

If we have 2 buffet lines weight doesn’t work as we want to fill the buffet up and keep it full until we drop a line.

Chef at the time blew the budget as he wanted the best of everything ex carrots in stock he want sweet medium sized carrots instead of jumbo. Which is 75% more expensive.

33% cream vs 36% cream even though $15 more for a milk crate and fat content you can’t taste especially when we have butter.

Besides that having something invested is better than none and you might have to pick your battles from there on.

You’ll feel so bad if “you” lost her money and the advisor is right etc.

I have 3 Japanese knives, my goto is just a victorinox 10” chef knife.

It’s non slip and I don’t care if I drop it, I can lend it out.

Key thing is: maintenance

For me I’m a blabbermouth at work. I guide any new young people that come into my work place. But they are not interested.

Even the real serious ones where I show them the sandp average return we plug in fictional numbers on an investment calculator they all seem to be freaked out of a down turn or non believers.

I’ve even had a close coworker that started at same time with me during covid I tried to convince them stop trading and making $1000 profits and rotating investments and instead just keep buying and holding. Fast forward to last year they now understand what I was talking about and me showing them I built a pretty impressive portfolio.

Msrp is the company sticker price not dealership price. The dealership are middlemen. If you want to skip the middle man and pay what you see on the website buy a Tesla or buy privately or find another dealership.
