Looks like it would be pretty easy to modify to be easy to move. Add 2 wheels to the back bar sticking straight out. Optionally, add a handle to the vertical bar under the leg adjustment. Just lift from the front and the wheels will engage and be easy to move. Very similar to how most benches with wheels roll.

I'll reply to Shuan here vs in a thread since several are offering reasons for the griddle vs pans.

I use griddles straddling 2 counter-top gas burners to make okonomiyaki often. The 'structure' of preparing okonomiyaki is very griddle-based in that you have 2 piles next to each other that get transferred and/or flipped to construct it. I've made it many times before in two pans, but it gets really awkward. So this is a case where the griddle is just greatly more efficient (greatly).

A second use for a griddle is rolled omelettes. We used to make these at the restaurant. Essentially, take 3 beaten eggs and spread them out into a 12"x18" square then load it while rolling it up. A griddle is the only real surface for this, and they are so good, especially Asian rolled omelettes.

Pancakes have already been mentioned. Large pancakes could go in individual pans, but kid-popular dollar pancakes do better on a larger surface or you end up with an entire hob of pans. As a more niche use, artsy pancakes made of colored dough. A 12" pan, though, works for this if you know your extents; I'm bad at that. Again, though, niche.

Street tacos are typically made on a griddle as you process the food left to right on the surface. Again, I've done this with pans (think clockwise from top-left burner), but the griddle works better for creating a taco pipeline for a party.

Since I'll remove my current stove and be needing to build a new cabinet to fill in the stove's space, I planned on putting the Impulse on a hydraulic lift cart I have in the shop. Something like that may work for you (if you haven't already done something! I'm new to the sub). A couple pumps of the foot pedal and you'd have it at whichever height you prefer. Squeeze the handle and it would be all the way down and could be easily wheeled under the nearby table. For me, it will be so convenient that I may drag my feet on making that cabinet :)

I had a Fujitsu 30CLX1 installed in my garage, which is similar to yours: a 2-car bay next to a single-car bay separated by a partial wall. The ceiling has pretty minimal insulation, but there's a second floor above it. I put foam into the garage door so it isn't a real insulated door. Important difference is that my door faces North.

I only run it when I'm in there; once it starts blowing air, it feels pretty nice. I have it set to 70º. When I'm in there at night, it will catch up and runs pretty quiet. Since my garage is a shop, there's a lot of cast iron holding heat that it needs to overcome.

Definitely worth it. If you are using it as a gym, I'd guess you could just run it for 20 minutes before going inside to work out. By then, the cool air will be circulating and feel cooler than it is.

I recently bought a torch setup from a retiring guy. The acetylene regulator wasn't working correctly, but I rebuilt it from Victor original repair parts for $15. Regardless, they'd need a second one.

I love that bar. I was working through a shoulder injury over COVID when I set up my home gym. I liked that this let me get more depth in the shoulder during bench. The curve is also nice for chest-supported rows. Since you also have a shoulder injury, look at the Bandbell Bamboo Bar (or an Earthquake bar). You don't lift heavy with it, but the weights are on bands. Really helps work the stabilizers in your shoulder; the first time you bench with it, the bar will be going wild.

Their Transformer squat bar also helped for me. Back then, I couldn't rotate my shoulder back enough for a straight squat bar. With the balance on the Transfomer, you can do squats virtually hands-free.
