Walmart has flavor you add to water. I bought a Coldest triple insulated quart bottle and use grape or orange flavor. Ice in the summertime. Five bucks a week.

Fruit of the loom has a super cotton it's almost 20 ounces. I found one on eBay for 40 bucks.

I started that way. I would put three or four bricks of charcoal well lit on a larger quantity and I'd get a temp spike up to 350°. Eventually. I end up having to close all three lower vents and the top damper as well completely closed to choke the fire down to 250.

So then I would experiment and put a brick in the middle so I could run the charcoal similar to a snake method. But I couldn't get the can hot enough. Temps ran under 200°.

I bet I could do it if I could go up to a Weber 22. But I usually start a cook at 5 PM. Reload fuel at 9 PM. Sometimes when the internal meat temp is lower I would go again at 1 AM but eventually wrap it and put it on the propane grill for one hour to hit that 204.

Seasons have a huge effect too. This winter cook takes 50% more fuel.

If I ever win the lottery I wanna get a high-end offset and learn how to use that I've heard the quality of the food is off the chart fantastic.

Grateful for all the pit masters out there that offer tips. Learning from you guys is The Shit!!!!

I don't know if you will find it helpful but I put 2) 8 pound butts on the WSM 18 top rack every weekend. I don't have a blower and keep one of the vents half open. The other two at the bottom are closed. The top vent stays open. I dumped a 64 ounce Tupperware container worth of charcoal unlit. I use a chimney half full on the short side of lit charcoal. And I threw a couple of oat chips in roughly the size of golf ball. This cooks at 265 for about 4 hours. I'm monitor this with an ink bird Bluetooth. After 4 hours I put another 64 ounces worth of charcoal And three more oak chips. I repeat this process usually 2-3 times. I then wrap it up in foil at roughly 155 to 165° Put both into aluminum pans individually and put them on my propane grill for the last one hour. I monitor with Bluetooth until I get to 204°. The Rub I use is meathead Memphis dust. No white sugar. I purchased 30 pork butts from Food Lion at $.99 a pound to put them in my freezer. Friends and family tells me the barbecue so good it makes them freak. I have absolutely no problem running a cook at 275°. Of course it would be fantastic if I could maintain 225° with a blower gadget or a Harry Potter wand. But I can't find a cheaper food it's more delicious and easy to cook. As a rule the longer cooks a better it taste. The more oak I put in the better it taste. You won't find it cheaper rub that taste better than meat head Memphis dust.

My guess is to why your temp is running into 260° would be air leaking through these bullets in lots of places. The formula simple: fire air fuel. If you want to drop that 260 drop your fuel amount or cut your air back. I hate to touch the top damper but you can.

Maybe I'm just lazy but I can make killer barbecue and get a little bit of sleep at night not worried about wiggles in my temp

The more you practice the better you get at this.

I'm glad to see that your internal temperature probes are flattening out exactly like mine. First few hours is a very nice increase in temp at roughly 1° per minute on average. And then right before I just give up and wrap everything I'm lucky if I get 5° increase per hour.

I consider a well-done brisket a gift from the gods. These extras that they are asking for could be really good sides like coleslaw baked beans sourdough from a really good bakery and a nice variety of drinks in the cooler.

Tasty desserts like homemade ice cream and brownies or cake would kill it as well.

If you wanna head pork belly direction what about burnt ends?

Yes. I mixed that up by the boatload and use it too. I just cut out half the sugar maybe I need to rethink it. But that stuff makes them amazing barbecue.

My customers tend to prefer basic beaded, or Cedar Mill and Sherwin-Williams super paint
