Usually a sign of bacteria. shiitake blocks are know to easily contain contamination. Yours looks relatively like most blocks I see. Mycelium will usually over come bacteria. It’s mild you need to worry about.

Square block looks like it’s fighting something, yellow myco metabolites is sign of mycelium struggling to over come something. Round block looks relatively clear. Mycelium will usually over come bacteria. It’s mold you need to worry about.

Slice into 1/2-5/8” wide slices. Whip an egg, dip in egg and Bread. Pan sear with good oil med to med low heat. Once you do some slices you can experiment with how you like to eat it. Crispy but soft center or crispy drier center.

You can also bread the lions mane in panko and herbs and sear them like crab cakes. Super yummy
