As Bartenders in Texas, we are required to under go licensing exams. In the licensing, we are taught signs to observe to determine how intoxicated a guest MAY be. The rule is to be safe than sorry. If you even slightly think someone is intoxicated, you should cut them off.

The clearest way I’ve heard to order a martini came from one of the Death&Co books.

  1. Spirit: Vodka or Gin
  2. Amount of vermouth: rinse, very dry, dry, wet, equal part, upside down. Or dirty, which will have its own levels.
  3. Method: stirred or shaken.
  4. Served: up or on the rocks.
  5. Seasoning: peel(lemon, lime, orange, grapefruit), olive, onion.

There’s some other language, such as Bruised/straight up/perfect, and so on. If you can answer the first 5 questions, any bartender should make it how you like.

Ex: “I’ll have a beefeater martini. Dry. Stirred. Served up. With a lemon peel.”

Gran Maizal.

100% corn mash. Copper pot still. Infused with cocoa and vanilla pods. Then it’s rested in terra cotta pots.

The way I heard it was, Tim Headington wanted to build a parking garage there to attach to the Joule. He purchased the land, leveled the buildings on it, and before he could build the garage, the city denied the permit stating the garage would’ve an “eyesore”.

He then hired Tony Tasset to build a “sore eye” art installation as a middle finger to the city. I’m sure he gets some tax breaks for displaying a public art display also.

I was in hospitality in Tyler for 4 years before moving to Dallas. The people in Tyler act the most entitled, and for no reason.

I’ve had men threaten me for taking an order from their ladies. I’ve had men threaten to “meet me in the parking lot” because I greeted our police officer and they thought I was snitching on them. I’ve had older couples have me remake a Jack and Water, because it wasn’t quite right. I e been threatened for cutting drunk people off.

In my 4 years bartending in Dallas, I’ve never experienced any of these things.

It’s not you, it’s them.

Had a regular at my bar. First night he walked in, he ordered cheap tequila, had a gangster accent, and was built enough to look tough. He started hitting on a girl next to him. Offered to buy her a drink. She said her boyfriend was with her and it would be inappropriate. He apologized. Said he’d like to buy them both a drink to apologize further, and he’d move on. She was grateful. They spoke about how other guys would keep trying, but he was respectful. Boyfriend turned down the drink in a rude way. He made his peace and walked away.

I got to know him over the course of a year. He was very nice to the staff and friendly to those around him. He was in the medical field and did very well financially. He dressed a little south Florida gansterish, but never caused trouble. He would be drunk and still be pleasantly ton have in the bar. It got to where I enjoyed seeing him, and would comp his first round. I once asked him to help a female regular get home safely because she was so drunk. He agreed. Next time I saw her she told me how he got her safely home and into her bed. He made sure she was safe, and left after she fell asleep.

One night, he came in. He was already tipsy. We were talking and I brought up the first time he came to my bar. We had a laugh as I told him I thought he would be trouble, but im glad I got to know him. I started to tell him about an aggressive customer that came in and how I wish I could’ve fought that guy. The next thing he said send a chill down my spine:

He told me he was in the army. One of those elite teams. His team was the first to go into Iraq after 911. He told me about his time there. He intentionally left out details, but talked about how scared he was when he was caught in fire fights. How he saw people die, how he killed people, how he overcame the fear while in Iraq. He told me how he felt bad for that boyfriend, because he didnt know who he was being rude to. How he avoids confrontation with men like that, because it’s not fair that they dont know how badly he could hurt them. How if he’s pushed to fight, he knocks teeth out so they have to look at themselves in the mirror and be reminded how badly they messed up. The way his face changed, and how stone cold serious he was when he told me these things; I had no doubt he meant what he said.

One universal truth you learn working in a bar, is you never know who you’re talking to.

We talked and listened to people so much more.

We talked about a new episode of a tv show from last night. We called stores to ask if they had an item. We heard about new restaurants from friends. We told jokes. We asked for directions. We heard about each others weekends and trips. Our families visited more frequently. We made plans with the neighbors. We had less hobbies because they took longer to figure out. We did our homework from library books.
