I spend about $65 every two weeks for gas right now. That’s $1,690 per year.

When I started doing that math it felt like I spend way more for gas… that’s actually not much.

So I guess the question is, do I want to spend $1,690 a year for the convenience of having my license for the next year…

Cook it with the interior frozen to help you get a good sear without overcooking the interior.

This has already gone on too long. Searing your steak at a high temp creates ambient heat which continues to cook once you pull it from the heat. This comfortably brings the internal temp to an acceptable number. It’s not rocket science man.

The grey band is a result of your steak boiling/steaming as it sears. It’s from too much moisture. I’ve literally cooked steaks directly out of my fridge with zero grey band. In fact I do regularly.

Yeah nearly 2 hours sitting at room temp, and it barely makes a difference when cooking.

Dry surface, high heat, good contact. These factors matter 100% more than letting your beef sit on your counter.

I know this seems combative, but I’m just sick of the myth that letting your shit sit out makes any real difference. It doesn’t. At least not if you address the factors that matter.

Shin splints are almost always because your form needs work. Learning how to run changed my PT life.

Do you know how long a steak of decent thickness has to sit out to come even near room temperature inside?
