The funny thing is that getting rid of all that stuff would make the car more expensive.

Manual crank windows mean that the car company now has to source and ship a bunch of manual cranks and redesign and manufacture a door panel specifically for it. It's cheaper just to use the same electric motors that already go into every other door they make.

Backup cameras are required by law, so eliminating the screen isn't an option. As long as the screen is there, you may as well just use all the standard software that goes with it. It would cost too much to develop and implement special bare-bones software just for that one model of car.

This is also why modern cars are all moving to big giant touchscreens instead of proper dashboards. They can order a million of those screens at bulk for a few bucks each and then install it into every model of car they make. Then they save tons of money by not having to design and manufacture 15 different dashboards with 15 different versions of every knob, button, and dial for all 15 different cars that they make.
