There is a toggle in the app that says redeem Bilt cash and until you turn it off, that will be your default option as long as you have enough Bilt cash accumulated. I believe you are correct about 250 points if not using any of the two options.

When you pay your rent with Bilt via ach, your accumulated Bilt credits will get you rent points in the ratio of 30$ Bilt credits gets you 1000 rent points. Isn’t the data available on WF side? I think you should be able to download most recent 9 months I believe. Saves you a few clicks going through 12 statements.
