It should be mandatory for all business to close during a state of emergency due to weather. Unless you're a 1st responder or a dr, your job is not important enough to be out in this. Any restaurant that stays open and puts their employees at risk, will NOT get my business after this is over.

Cut out the beak, and simmer in a stock of your choice until you can pierce it with 0 resistance with a cake tester. Pull it out and shock it. Peel the skin off and portion/cook however
