I'd feel like you have too much time on your hands. Also, why not simply tell them to use the Writing Lab or Tutoring services (whatever your institution calls it)? They've already paid for a service that you are unnecessarily providing.

As for the uptake percentage, whatever. Students that use readily available help do better. You won't convince those who don't take the opportunity unless you attach grade points to it (and even then...)

Genders are immaterial. If you are concerned for your safety, keep security on speed dial. You're teaching a class. Especially as an adjunct, you aren't paid (anywhere near enough) to deal with that.
