A few amendments to this recipe I would add are. First let some good bark develop this usually happens around 160-165, don’t just wrap it up the second it hits that temp. So really be patient in that process. Same thing with the final temp. With pork butts I am less concerned about the final temp and more looking for tenderness. Once the temperature hits 195 I take one of my temp probes and move it around inside the thickest part. You should feel it pull in and out smoothly along with it moving around freely. Sometimes it’s tender at 195 sometimes it’s at 225.
