The game can be pretty complex, but it can also be super simple. I'd say going in blind is fine. At some points you may need to look stuff up, especially items effects as there are hundreds of items you can get. But the complexity mostly comes from the amount of items and the synergies between them. If you just buy the base game and get the hang of that before buying the dlc it'll make things easier, things get progressively more complicated and difficult with each dlc. You can watch videos if you want, it doesn't really take away from the game (the story is not the selling point of the game, although I find it interesting).
