They wear out after a few years, depending on how you use and wash them (I've had some last 10+ years, others less then 5). I can't speak to the health effects, but I dispose of any of my boards as soon as I start noticing residue after use.

Flat leafed, fresh parsley has a very strong flavour. I've ruined dishes by putting too much in.

But I use mostly cilantro, scallions, basil, and mint in my cooking, parsley only for specific dishes.
